This was a fabulous and fresh light salad. I did add a few finely cut slices of red onion to mine. When made in season this is a beauty. It’d be ideal as a lunch option and would make any host happy if you brought it along.

I made this for my card group and everyone liked it . . . bar me, but only because I discovered I don’t like rocket when it’s not mixed with other greens. Lesson learned. Once the quinoa is cooked it’s so easy to put together. Also, I might try a different cheese next time - I’m in the USA, and not only couldn’t I get buffalo mozzarella, the manager of the dairy section (and I) hadn’t even heard of it. Ordinary mozzarella is just too bland - in this country anyway.

I made this for lunch and it was delicious. I would make again. I loved that it was versatile too and I could make swaps for things I didn't have in the cupboard.
I didn't have quinoa but I did have cooked pearl barley so swapped it out. I didn't have mozzarella, but I did have goat's cheese so just used that diced. I only had rocket in a bag of mixed salad leaves, so used that. I already had some home made oil and vinegar dressing that was almost identical but without the maple syrup. I'm a pre-diabetic in remission and the peach was sweetness enough. The dressing didn't need maple syrup. The result was very tasty, delicious and light enough for warm summer's day. I shall definitely be making again.

A great salad. I'm loving fruit combinations lately, so I thoroughly enjoyed it 😊. Easy to make and so refreshing in this heat when you don't feel like eating anything. But it's not enough for 3 people 😋

This is my new go to summer salad! Delicious and very adaptable. I used some goats cheese and walnuts instead of mozzarella and pecans.

Another game changer salad. Off to a BBQ with friends and I offered to take salad. Thought I’d give this one a go as I had all the ingredients. Naturally I had a spoonful! Absolutely delicious and it made loads! Will be making again. This is definitely not a boring salad! 10/10

I made this with rice and chicken as I don't tolerate quinoa and chickpeas too much. It was super easy to make and absolutely delicious! Perfect for these hot summer days! Thank you :-)

What a fabulous summer salad! The only word of warning: if you’re like me you’re likely to overeat as it’s so nice. 😊

Absolutely delicious! I will make many more times during the summer!

This was delicious! I substituted Trader Joe’s 10 minute farro for the quinoa.
