roughly chopped (to serve)
For the dressing:
peanut butter
sriracha sauce
juiced
water

Ingredients

Serves 2
chicken breast
Swaps: firm tofu
sliced into thin strips
Swaps: iceburg lettuce, romaine lettuce
finely shredded
carrot
julienned
finely sliced
sugar snap peas
sliced lengthways
finely shredded
coriander
roughly chopped
peanuts
roughly chopped (to serve)
For the dressing:
peanut butter
sriracha sauce
juiced
water

Method

Gather and prepare your ingredients.

In a small bowl, whisk together all of the dressing ingredients (add a splash more water if needed, it should be a pourable consistency). Season to taste.

Place the chicken strips in a bowl and drizzle over ⅓ of the dressing; season with salt and pepper. Toss until the chicken is well coated.

Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken and cook for 7–9 minutes, until cooked through and lightly browned. Remove from heat.

In a large bowl, toss together the salad ingredients; add the chicken and drizzle over the remaining dressing. Sprinkle with peanuts to serve.
