Gorgeous salad, very filling. The longer you marinade the chicken the better it tastes. Score the skin lightly beforehand.

I don’t like pomegranate seeds therefore I just chopped up a red pepper finely and added that for crunch. I added broccoli as a side veg just because I had to use it up. A pack off Tilda ready cooked brown rice saved time and was ideal stirred into the chicken to heat it up.
