Roasted Strawberry, Spinach, Red Onion, Balsamic and Feta Salad
Say hello to your new favourite salad. In this recipe we roast strawberries to amplify their flavour, blend half into a luscious dressing and use the other half as a salad component. The result is a sweet, savoury, crunchy creamy salad that you are bound to make time and again. Not only are strawberries delicious, their antioxidant and anti-inflammatory properties have been shown to promote recovery following exercise. If you’re not a raw onion fan hear us out on this one - soaking them in cold water removes their acrid burn and transforms them into a sweet and crunchy addition.
