1

Gather and prepare your ingredients. Preheat the oven to 200°C/180°C fan.

2

Place the sweet potato on a large baking tray, drizzle with the olive oil and season with salt and pepper. Roast for 15 minutes until slightly golden.

3

In a small bowl, mix together the spice mix ingredients.

4

Add the tofu, vegetables, and beans to the baking tray and mix well. Pour over the spice mix and toss to combine. Place in the oven for 20 minutes until golden.

Excellent. I took the advice of others and increased the amount of sauce. I just used smoked paprika, tomato paste and some sriracha sauce because I didn’t have chipotle paste.

Carolyn 1 week ago

The recipe was too spicy . I did not add the chilly flakes and even with just the chipotle it was very spicy . Made a cucumber and yoghurt side dish to calm it down a bit . Would make it again with adaptions

Esha 2 weeks ago

Nice, felt very healthy eating it! I doubled the sauce as suggested in comments to give it more flavour but it was a little too spicy. Just added some plain yogurt with it and it paired perfectly.
My young kids would not eat it though sadly.

Definitely needs more sauce. I halved the Chipotle and chilli flakes as didnt want it too spicy. Might add some tomatoes next time as felt it was missing something 🤔

Delicious

Very good idea for an easy dinner dish. I marinated the tofu in the refrigerator for a couple hours. This traybake made a great meal with a salmon filet and a small salad. The leftovers will be enjoyed with many other similar ideas.

Doubled the sauce and it was perfect

Really good. Easy to prepare, tasty, healthy and delicious cold too. 🤙😀

Ros 1 month ago

Not my most successful meal. Disappointed that the Tofu wasn’t able to take on flavour of sauce and vegetables - will marinate before cooking if I make it again.

I doubled the sauce and it was still a bit dry so I served it with Greek yoghurt. Not sure it was more then the sum of its parts - and I might try grating the tofu if I use it in a tray bake like this again as it was just bland under the outer sauce layer.

I made it with extra spices and chicken too . Really great and very easy

Dan 1 month ago

It was absolutely delicious. I’m converted to tofu, finally. Nice with kefir on top.

Jane 1 month ago

Tasty, and having read other reviews, I upped the amount of sauce. I used frozen onions, spinach and peppers, which probably made it less dry as well. Will definitely do again.

A good recipe. Easy to prep and quick to cook. Me and my family really enjoyed it, though my daughters did find the dish a tad bit too spicy so will put less chilli flakes next time.

Elmedin 2 months ago

Quite nice. Needs a bit of seasoning - made more of the spice mix and had to add more salt

Very simple and really tasty. I squeezed the lime juice into some natural yogurt and had that as a dip on the side!

Rika 2 months ago

frozen spinach which gave enough wetness. Left out chipotle paste and added another tbsp of olive oil. For serving some hummus and/or sour cream with fresh herbs. Yummie!

Marian 2 months ago

Will double spice mix, Chipotle paste very nice!

Sally 2 months ago

I've been planning to make this for weeks, but either ate too big a meal earlier, or didn't have all the ingredients. Having finally done it, I was right to expect it to be delicious - it really was. So many different flavours and textures, as well as colours. I topped it with a ripe avocado mashed with Greek yogurt, and much more coriander than suggested. Next time, I'll probably double the ratio of dry spices to chipotle paste.

Tried this recipe with mushroom tofu - beautifully tasty. Added green beans and spring greens rather than high oxylate spinach to optimise my calcium intake.

Pam 2 months ago

Large portion size Tasty mix but needs a dressing or sauce to maximize the dish

Katherine 3 months ago

Cook sweet potatoes for longer, less chilli flakes and I increased the lime juice as it is a tad dry. Also served with yogurt as others suggested which was a good shout

Karen 3 months ago

I liked this recipe but it was a bit dry maybe because I cooked it in the air fryer. Next time I will double the sauce ingredient's.

Easy to make and very flavorful!

Kay 3 months ago

I doubled up the spice mix & increased the oven temperature towards the end to crisp up the veg.
Plenty left over for lunch tomorrow.

Rachel 3 months ago

It’s a simple dish to make. I did have all the right ingredients, only one tin of black beans for example, and my spinach was frozen. So I added red kidney beans and white beans, and used Pak Choi instead of spinach.
It tasted good, but it was dry, so we used salsa and yogurt as accompaniment to the dish.
As someone else wrote it was a large portion, so we’ll have it later in the week.

I’m not a lover of tofu but this recipe is very good and the flavours work well.

Lucia 3 months ago

Great recipe, mine turned out a little bit too dry but overall I am happy how quick and tasty it was.

Amanda 3 months ago

A bit too spicy but very tasty! Used smoked tofu- excellent! Will leave out chill flakes next time. Made enough for 3 with 2 lunch portions
