cod fillet
Swaps: haddock fillet, hake
boneless, skinless, cut into 3cm thick pieces
panko breadcrumbs
smoked paprika
cut into 3cm thick wedges
red pepper

peas (frozen)

Method

Gather and prepare your ingredients. Preheat the oven to 220°C/200°C fan.

Place the sweet potatoes onto a baking tray. Drizzle with almost all of the olive oil and sprinkle with salt and pepper. Place into the oven and bake for 15 mins until tender but not fully cooked.
