Method

Gather and prepare your ingredients. Preheat the oven to 220°C/200°C fan.

Arrange the chicken strips and red onion on a large baking tray; drizzle with olive oil. Place in the oven for 10 minutes.

Meanwhile, mix together all of the sauce ingredients in a small bowl.

Remove the chicken and onions from the oven. Add the remaining vegetables to the tray, in an even layer, then pour over the sauce and toss to combine. Return the tray to the oven and cook for 15 minutes, until the vegetables are tender and the chicken is cooked through.

Serve garnished with the toasted sesame seeds and a side of wholegrain rice or noodles, if you like.
