Method

Preheat the oven to 200°C/180°C fan and gather your ingredients.

Mix the shredded tofu, cauliflower, tomatoes and red onion in a large mixing bowl with the cumin and coriander seeds, turmeric, olive oil and some seasoning.

Spread onto a lined baking sheet and roast in the oven for 25 -30 minutes, until the cauliflower is tender. Take out halfway through to stir.

Remove from the oven, stir through the spinach leaves and serve, garnishing with the chopped cashews and coriander, and a dollop of yoghurt on the side.
