Method

Gather and prepare your ingredients. Line an 18cm round cake tin with baking parchment.

Place the apples and pears in a saucepan and add the water. Cover with a lid and simmer for 5 minutes. Remove the lid and continue cooking for another 5 minutes until the apples and pears are soft and the water has evaporated.

Break the chocolate into the cooked fruit and stir until melted.

Tip the mixture into a high-speed blender and add a pinch of sea salt. Blitz until really smooth.

Pour the mixture into the lined cake tin and smooth over the top with a spatula.

Place in the fridge for at least 4 hours (or overnight) until set.

Remove from the tin and dust with raw cacao powder before serving.
