porridge oats (rolled)
baking powder
coconut sugar
almond milk
coconut oil
maple syrup
strawberries
quartered
walnuts
roughly chopped
banana
mashed (very ripe works best)

Method

Gather your ingredients.

Put the oats in a blender and blitz into a powder, then combine with the baking powder, sugar and a pinch of salt.

Add the bananas, almond milk and apple cider vinegar and blitz again until smooth. Set aside for 5 to 10 minutes to thicken slightly.

Heat a little coconut oil in a non-stick pan on medium heat. Ladle the mixture one at a time onto the hot pan.

When you see bubbles appear on the top, flip the pancake to cook on the other side until golden brown. Set aside and repeat with the remaining mixture. The bubbles will begin to appear at the edges, when they move closer to the centre it's time to flip.

Create a stack of pancakes, dress with the berries, crumble over the walnuts and serve with a drizzle of maple syrup.
