Method

Your notes

1

Gather your ingredients.

2

Put the flour, flaxseed, hemp seeds, almond milk, baking powder and a pinch of salt into a food processor and blitz for a few seconds until combined. Leave to sit for 20 minutes to allow the mixture to thicken slightly.

3

Heat the coconut oil in a pan over medium heat. Pour a ladle full of the mixture into the pan one at a time. Cook each pancake for 2-3 minutes on each side. Set aside and repeat with the rest of the mixture. These should be slightly thinner than an American style pancake.

4

To serve, top with the berries, nuts, peanut butter and maple syrup.

I used frozen mixed berries which I cooked on a gentle heat along with the peanut butter and maple syrup. It went lovely and thick & gooey.

Used Half all purpose, flour and half buckwheat flour. They came out very flat and bland. I don’t think I over mixed so not sure why came out that way. It’s a good alternative if I’m looking for a healthy pancake.

This is my favourite thing so far from the app 😁 I didn’t have any hemp seeds so just did all flaxseeds. I can’t eat pistachios or peanuts so I did hazelnuts and hazelnut butter and used blackberries. There’s different combinations I could try and will definitely make again

I used oats rather than flour and almond butter instead of peanut butter and made a coulis from the berries by simply heating frozen berries
