Method

Gather your ingredients.

Put the oats, milk, eggs, baking powder, salt and matcha in a blender and blitz until smooth. Alternatively, whisk together in a large mixing bowl. Leave to sit for 15 to 20 minutes.

Heat a teaspoon of coconut oil in a non-stick pan on medium heat at a time. Ladle the mixture onto the hot pan, one ladle at a time per pancake.

When you see bubbles appear on the top, flip the pancake to cook on the other side until golden brown. Set aside and repeat with the remaining mixture.

Create a stack of pancakes, dress with the berries and apple, crumble over the walnuts and serve with a drizzle of maple syrup.
