Orange and Almond Cake

This simple cake recipe gets its citrus flavour and unique texture from an entire boiled orange. Though the prep time looks long, most of that is spen...t hands off, waiting for the orange to boil. Once that’s done all you have to do is blitz the rest of the ingredients in a food processor. Oh, and boiling the orange will make your house smell amazing! Including the pith and rind means you get more nutrients from the orange. Due to pesticides, we recommend using organic. If that’s not possible, wash well using a pinch of sodium bicarbonate and a splash of white vinegar. Delicious cake and the kids loved it to! I swapped the sugar with 2 tablespoons of maple syrup

This cake is just fabulous, I would never have thought to boil an orange !

Lovely and moist with a delicate orange flavour.

I am delighted with this cake recipe. It is a delicate orange flavour with a very fine texture - though the texture may be because I used self-raising gluten free flour and guar gum, in place of the almond meal and baking powder. Many thanks to Dr Rupy and his team.

My daughter made this for me and it was a really lovely cake, I will add it to my list of favourite caked.

Would have liked it a bit sweeter.

The mixture was alittle bit too wet, not sure if it was meant to be like this, added some flour to get a better consistency.
