Orange and Almond Cake

This simple cake recipe gets its citrus flavour and unique texture from an entire boiled orange. Though the prep time looks long, most of that is spen...t hands off, waiting for the orange to boil. Once that’s done all you have to do is blitz the rest of the ingredients in a food processor. Oh, and boiling the orange will make your house smell amazing!

Including the pith and rind means you get more nutrients from the orange. Due to pesticides, we recommend using organic. If that’s not possible, wash well using a pinch of sodium bicarbonate and a splash of white vinegar.

Method

Gather and prepare your ingredients. Grease and line a 16cm cake tin with parchment paper.

Place the orange into a saucepan and cover with filtered water. Bring to a boil and allow to bubble for 60-90 minutes, until you can easily pierce it with a sharp knife and feel no resistance. Preheat the oven to 190°C/170°C fan.
