We added this to quinoa instead of using corn tortillas, so this made a great, colourful salad to go with our other salads each lunchtime. I didn't use the nuts, and used lemon juice instead of lime.

Very easy to put together. The sauce was tasty. Although needed a lot more Olive oil to be able to blend. I would add more jalapeno next time. Everyone at lunch enjoyed it very much.
