Method

Your notes

Gather and prepare your ingredients. Preheat the oven to 180°C/160°C fan. Line a baking tray with parchment paper.

Mix the milled flax and water. Set aside to soak for at least 15 minutes. It’s essential that the flax and water bind together, becoming really gooey, to guarantee the correct result.

Place the soaked flax, brown sugar and extra virgin olive oil into a mixing bowl. Mix to combine.

Add the ground almonds, pecan nuts, dark chocolate and a light sprinkle of salt and stir to combine.

Shape into 12 balls. Flatten slightly and place onto your prepared baking tray. It helps to do this with wet hands.

Place into the preheated oven and bake for 10-12 minutes, until lightly golden. Allow to cool completely on the tray.

Cookies are super easy to make. I could have chopped the chocolate smaller because when forming raw cookies the nuts and chocolate pieces fight each other for batter! If you want typical not chunky cookies chop the chocolate and pecans small. I would make them again.

These were so easy to make me delicious. I even think my grandkids would love them.

Surprisingly filling. They came out crispy on the outside and chewy inside. I’ll try cooking a couple of extra minutes next time to see if I can get them slightly less chewy without overcooking them. But they are good as is.

Amazing texture n flavour! I have tried many recipe for cookies, especially those using oat flour, I couldn’t get the store-bought cookie texture. However this one I couldn’t! This is teh first time I used almond flour. Not sure is it due to that. Texture is crispy perhaps also due to the nuts and seeds that I have swapped from pecans. It is not the chewy texture that I have baked using oat flour.
I reduced the oil Ive oil to 2 tbs and adopted 2 tbs date paste instead of brown sugar.
