Notes

Freezing Instructions: Baked cookies can be frozen. Allow to defrost at room temperature before eating.
Raw dough balls can also be frozen. Place on a baking tray into the freezer. Once hard, remove into a bag. They do not need to be defrosted before baking, but you may need to add an extra 3-4 minutes of cooking time.

dried apricots - raisins, sultanas, dried figs, toasted coconut flakes

pecans - roughly chopped walnuts, peanuts, cashews, hazelnuts

dark chocolate chips - cacao nibs

pumpkin seeds - sunflower seeds

As above. I suggest unsalted peanut butter and maybe dates instead of apricots. I took this to my stroke group. People there avoid salt (due to blood pressure) and sweeteners (some have diabetes).

Good cookies but disappointed that with all the nutrition info there isn’t one for carbs, which is needed so my husband can take the correct amount of insulin. Be great if this could be added? ☺️

I swapped whole meal flour for almond. I swapped peanut butter for almond. I used only two, not three ounces of coconut sugar. I swapped apricots for raisins, pecans for walnut and I added a pinch of cinnamon. Excellent !

These are insanely delicious. So hard to stop at one. We added dates as we didn't have apricots. Tasted amazing! Will definitely make again. Great to do with the kids.

These taste delicious but I find them really difficult to roll into balls. Just too sticky and end up with coated fingers. Not sure where I am going wrong!
