Rupy's Lentil and Mushroom Gravy
This gravy is thickened with lentils and mushrooms, rather than flour or cornflour as is found in many recipes. They not only add body, they bring a lot of flavour. Rupy made this in the studio one day using what he had available to him. Strawberry jam may sound unorthodox but trust us - it adds the perfect amount of sweetness. If you don’t have any, maple syrup or honey will work just fine.

Notes
The gravy can be frozen for up to 3 months. Allow to defrost in the refrigerator before reheating. You may need to add a splash of water to loosen.
Alternatives:
jam - honey, maple syrup
white miso - brown miso (use half the amount)
smooth Dijon mustard - wholegrain mustard
dried thyme, sage - herbes de Provence, dried rosemary
