Method

Gather and prepare your ingredients. Preheat the oven to 200°C/180°C fan.

Place the potatoes onto a chopping board and carefully make small vertical slits 3/4 of the way down each potato. Aim to make them about 2mm thin, or as thin as you can make them. If needed, place the potatoes in between the handles of 2 wooden spoons to stop the knife from slicing all the way through.
