Gather your ingredients.

Heat the olive oil in a large saucepan and gently fry the fennel seeds and garlic for 1 minute until fragrant. Add the tomato puree and cook for another 1 minute before adding all of the chopped veg. Pop the lid on and cook gently for 25 minutes, stirring occasionally to stop the veg from catching and browning.
