It was okay. Not sure I did it right. I thought aubergine slices were a bit thick so I cut them into pieces. Also was a bit wet to fry them. Perhaps that could be done in a different pan - they were more boiled. Overall it looks tasted okay but I’m not sure I would be in a rush to do this one again.

Do you really mean to fry the aubergines after the addition the Tom paste and vinegar?
Absoltely scumptious although added red pepper, and spinach as well and substituted garam masala for loads madras curry powder!! Love lots of flavour .
This is a lovely recipe, but it is very salty. I don't know if it's because I used (reduced salt) soy sauce instead of tamari, perhaps? Once I halved the soy sauce amount and used hot water instead of stock it was perfect
Delicious! Didn’t have garam masala, tamarin or rice vinegar. Used a medium curry powder, miso and malt vinegar instead! Was I close or anything else I should have used?
