Method

Gather and prepare your ingredients. Preheat the oven to 220°C/ 200°C fan.

Mix the oil, white miso paste, maple syrup and rice vinegar until smooth. Brush the aubergine slices with the mixture. Place into the oven and bake for 30-35 minutes, until tender and dark golden brown in places.
