Great flavours. Best thing about this recipe is its versatility. Lots of store cupboard items, ginger and stock in the freezer.
Using the flavours and techniques with a variety of vegetables means this recipe is very flexible . I use the max recommended spices etc.
Have made with broccoli & cauliflower and with pumpkin as the main ingredient. Pretty sure it would work with carrots & sweet potato too.
Chopped tomatoes work perfectly well. No need for baby tomatoes when they’re pricey.
Tin of butter beans or chickepas etc and you’ve got a meal with 2 of Rupy’s recommended BBGS as well as lots of other plants. 😀
I added a bit of sweet potato and a tin of lentils. So easy to make and delicious!
Deliciously warming but not heavy in the tum. I had left over cauliflower so substituted that for the broccoli. There was quite a lot of flavorful sauce so we had sourdough bread with it - so good!! Many thanks from Western Australia🤗
Just my sort of recipe! Simple, very tasty and healthy. We eat it with the mung bean pancakes and it's a delicious combo!
Easy to prep & cook, couldn’t bring myself to add ground almonds so I added a tin of chickpeas (& omitted the stock) really tasty
It would be nice to have veg portions in size rather than grams. E.g. quarter or half red pepper instead of needing to weigh 80g but the recipe is great. The flavour was delicious and mild.

Love that you can get such a gorgeously rich curry from chucking it all in the oven! It was really easy - another winner weeknight dinner 😁 I'll add this to my list to make for dinner guests too.
Made in with cashew nuts. Maybe suggest to serve is with rice or quinoa, a bit more filling
