Method

Preheat the oven to 220°C (200°C fan assisted) and gather your ingredients.

Heat half the oil in a large lidded oven proof casserole dish or pan over a medium heat. Add the chicken skin side down, season well and sauté for 4-5 minutes, or until the skin has browned. Flip and cook for a further 3 minutes, then remove and set aside on a plate.
