Lovely filling to these enchiladas, very refreshing; could be eaten as a salad as well. However, there was too much filling for the suggested 4 wraps - I needed 6. Also, with suggested quantities for the topping there wasn’t enough - probably because I needed 6 wraps instead of 4. It was also not ‘fluid’ enough and I had to add olive oil.
Overall, I suggest reducing filling quantities by 30% to fill 4 wraps and maybe adding some more water to the sauce.
