Mole sauce is a staple of Mexican cuisine. Rich and complex, with chilli and hints of cocoa, a traditional mole recipe takes hours if not days to make.... We have developed a shortcut version that comes together in under 30 minutes and uses supermarket ingredients - inauthentic but still completely delicious.

Gather and prepare your ingredients.

Place a medium saucepan over medium-high heat and add the olive oil. Once hot add the onion, garlic and a sprinkle of salt and cook for 4-5 minutes until softened and translucent.
