Great choice, wonderful flavor! I batch cooked this for my weekly work lunches. For a protein bump, I added fresh kale massaged in some of the dressing prior to adding to the salad. I also added smoked tofu, Italian Farro and topped it off with hemp seeds, pepitas, and nutritional yeast.
Good salad. Nice and refreshing. Also very healthy.
