Chopped Egg Salad with Toaster Croutons
This simple salad features vegetables, boiled eggs and croutons chopped into uniform-sized pieces that make it spoonable and easy to eat. It makes a great lunch or even breakfast. If eaten fresh the toaster croutons are crunchy, but if you want to pack it for work they are also quite nice when they are soft and have absorbed the zingy vinaigrette.

Notes
When it comes to boiling eggs, everyone seems to like their way best. We find that for this recipe a jammy yolk - not too runny, not too hard - tastes nicest. For this we boil for 6 minutes, then place immediately into the refrigerator to cool.
