Crispy Parmesan Chicken Tray Bake

We love chicken schnitzel but not the mess it makes. In this open-faced alternative simply brush thinly sliced chicken breasts with mustard and top wi...th parmesan enriched breadcrumbs. It’s important to slice the chicken thinly, it not only guarantees the chicken and vegetables will cook in the same amount of time, it means each bite of chicken will have the right ratio of topping to meat. Enjoy it as a light meal, or add some roasted sweet potatoes for a heartier option. Read more We love chicken schnitzel but not the mess it makes. Delicious though I added a drizzle of EVOO and spritz of lemon juice over it all before serving. I also added a few leftover new potatoes and leftover red pepper dip from one of the other meals on here I can’t remember the name of!

Tasty - make sure you’re generous with coating - I roasted sweet potatoes and peppers as well as green beans - put pots and peppers in earlier. Cooking time for chicken was spot on. Fab!

This was delicious. Used a red pepper instead of Broccoli. Cooked green beans on the stove as my husband does not like dry beans and roasting may have done that. Wedged a baking potato as that was what I had.

Quick and very tasty

I liked this recipe but the only downside for me was the vegetables created steam, therefore the chicken wasn’t really crispy. I’d cook again but do the chicken and veg separately
