Notes

The riper your banana, the more sweet the cookies will be. Try to get one that's very brown and spotty.

If using protein powder, use the best quality one you can find. We tested with several types and using a good quality one makes a huge difference. Go for one with as few ingredients as possible and no added sweeteners or flavourings. If using ground almonds, the texture and appearance will be a little different - they are less shiny and a little more soft.

I substituted two 2tbs of sliced almonds as I didn’t have hemp seeds and added one extra tsp of water. Turned out great and made 7 good-size cookies.

I love these for prepping and freezing
They're really fluffy yet still somehow cookie-like. I enjoy the texture of the smooth glaze that forms. The tips on the main page about substitutes were really helpful too!
