Totally delicious! I swapped spelt flour for buckwheat. Made it in a lined, greased loaf tin. Took about 45 mins to cook at a slightly higher temp. Smelled amazing when baking. Had a slice with a dollop of Greek yoghurt, chopped kiwi and couple of chopped dates for breakfast 😋
The mixture stuck to the muffin cases and took far longer to cook than the recipe guidelines. Disappointing
Yummy and light. Didn't have cottage cheese so made it with Greek yogurt . Sticks to the case but maybe we didn't allow to cool
Delicious! So moist & fluffy and just the right level of sweetness. I used wholemeal flour instead of spelt, and frozen blueberries straight from the freezer.

Love this recipe, I popped mine in a loaf tin and it came out lovely, we slice and freeze and my daughter has it for her breakfast with a side of berries before school!
