Notes
The mint can lose its colour over time, so if you want to prep ahead we recommend chopping the mango in advance and making the dressing right before serving. Once cut, the mango will keep well in the fridge for up to 3 days.

Method
Gather and prepare your ingredients.
Place the lime zest and juice, mint, and white sugar into a pestle and mortar and bash until you have a smooth paste. If you don’t have a pestle and mortar you can use a blender, or finely slice the mint and stir everything together.
Place the chopped mangoes into a bowl and drizzle with the sugary mint sauce. Toss to coat. Adjust sweetness to taste and serve.
