Method

Gather and prepare your ingredients.

In a bowl, mix together the chia seeds, half of the Greek yoghurt, water, and maple syrup.

Stir well, then cover and place in the fridge for 10 minutes; then stir again to prevent clumping and leave for another 10 minutes, until thickened.

Meanwhile, place the chopped figs in a saucepan, add the cinnamon and a splash of water. Cook gently for 5 minutes until soft and beginning to break down. Remove from the heat, mash with a fork and set aside until needed.

Spoon half of the chia pudding into a glass or bowl, then layer on yoghurt and fig compote. Top with the remaining chia pudding and finish with yoghurt and fig. Sprinkle over the toasted hazelnuts and enjoy.
