Notes

Psyllium husk comes in either a fine powder or a coarse powder. One tablespoon of the fine powder weighs 15g, and one tablespoon of the coarse powder weighs 5g, so be sure to use the gram weight, not the tablespoon measure, when measuring.

Method

Your notes

Gather and prepare your ingredients. Line a 2lb loaf tin with parchment paper, or lightly grease with olive oil. Preheat your oven to 190°C/170°C fan.

Place the chia seeds, psyllium husk, oats, nuts, seeds, and salt into a large bowl. Stir to combine.

Pour in the water and olive oil and mix well.

Scrape the mixture into your prepared tin. If you like, you can leave it to soak for 30 minutes - 8 hours at this stage.

Bake for 60 minutes. Remove from the tin and bake for a further 15 minutes. Remove from the oven and allow to cool completely before slicing.

I let the bread rest for 30 mins before I placed it in the lined loaf tin. I made sure to push it down firmly and it came out perfect! Next time I may make this loaf, and then another loaf with some diced dried apricots or sultanas. What a great way to start the day.

Loved the nutty taste of this bread and the crunch when eating it. Definately a good processed bread replacement when you want to top up with cooked breakfast items or salad etc for lunches.
Processed bread just badly bloats me to the point of painful pressure.

I love this bread and I’ve now cooked it 3 times! The first time it came out perfect… but the next 2 attempts were different - it rose up into the tin but the minute I took it out for its final 15 minutes in the oven, it just collapsed. I must be missing / messing something up but o can’t quite trouble shoot the mistake. Any thoughts? Thank you!

Tastes delicious, soaked it for about three hours, let it cool overnight then it fell apart when slicing it! Impossible to freeze in slices like that. Does it need soaking overnight- need to know.

I love this recipe and was thrilled to know it had now wheat in it. I do find it puts weight on me because it is so delicious that I always want to eat more. My solution is to slice it, cut each slice in half, freeze as suggested and just have a half slice, toasted from frozen, with my breakfast.

Wow! This is going to be a weekly staple for me.
The bread is absolutely delicious and very filling.
So easy to make too. I love all the different nuts and seeds and was surprised by the porridge oats which I thought would make it stodgy!
However it turned out beautifully and tastes great.
