Notes

The better the cacao and chocolate you use, the more delicious your mousse will be. Make sure your chocolate contains at least 80% cocoa solids and choose a raw cacao powder.

Method

Your notes

Gather and prepare your ingredients.

Place the chocolate into a bowl set over a pot of simmering water. Heat, stirring occasionally, for several minutes until melted. Remove from the heat and allow to cool slightly.

Place into a blender with the tofu, maple syrup and cacao powder. Blend until smooth.

Pour into small serving glasses and place into the fridge to set for at least 45 minutes before serving. Alternatively, chill in a bowl and spoon onto plates when you are ready to serve.

Serve drizzled with olive oil and sprinkled with flaky sea salt.

Notes

Delicious - quick to make. I melted dark chocolate in the microwave (very carefully) also liked the fact that it is egg free but still has a reasonably good amount of protein in it for a dessert.

This tastes really good. My consistency was a lot thinner than the picture... It was a thick smoothie.. Maybe I will drain the tofu next time ( even though the recipe states not to).

Yum! Have experimented and made it several times now with various toppings as an alternative to the olive oil and salt. Delicious with chopped hazelnuts or stewed rhubarb or raspberries or fresh strawberries.

Added water/soymilk to increase moisture to bring to pudding consistency. Tofu brand will make a difference for outcome.
