Creamy Sun-dried Tomato Beans

A comforting, balanced meal. The smoky paprika and sun-dried tomato paste create a luscious, flavourful sauce, while coconut milk adds a velvety cream...iness. To keep things fresh, a simple rocket salad tossed in lemon juice cuts through the richness, adding a bright, peppery contrast. If you can’t find sun-dried tomato paste you can make your own by blending sun-dried tomatoes, or substitute regular tomato puree. Read more A comforting, balanced meal. This was so easy and yummy. The tartness and bitterness of the rocket salad paired so well with this. It would also work really well with prawns or chicken for a meat version.

My partner and I both loved the simple and interesting sun-dried tomato paste and spice mix added to this creamy yet textured sauce. We added a portion of Frozen brown rice I had in the freezer to mop up the sauce since we didn’t have bread. Yummy yum!!!

Lovely, but very liquidy. I added some cornflour to thicken it. Thought I'd try adding some red lentils to do the same next time. I like the high amount of protein in this dish. Oh and the salad was quick, tasty and easy.

I used soya beans as I have bulked cooked kilos and kilos of all sorts of beans , I air fried temph in paprika , I followed most of the instructions . Added a good had full of whole wheat pasta , then dishes up in my lunch box with some frozen spinach and peas . Tastes divine and the frozen veg will have defrosted so a quick in the works microwave and fab !!

Very filling.
The first time I had cooked Tofu, it was delicious.
The recipe quotes 390 gms tofu, my pack was only 200 gms so I added 100 gms of mushrooms.
I served with a tablespoon of 5 Glorious Grains ( Merchant Gourmet ) and lots of flat leaf parsley.
Would have easily served 3 with a portion of vegetables, broccoli for example.
I am happy to recommend, I would give 4.5 if I had chance !

Delicious! I loves the combination of sun-dried tomato and coconut milk. A combination I would have never put together myself but it was truly special! I used smoked tofu which added to the smokey yumminess!
