Ingredients
Method
Preheat oven to 200°C (180°C fan) and gather your ingredients.
To make the almond crumb, put almonds into a food processor and blitz until fine. Add the oats and blitz again for a few seconds until combined.
Add coconut oil and pulse on a slow speed to mix in with the almonds and oats. Stir through the cinnamon and pinch of salt.
Put the berries in the bottom of an oven proof dish. Drizzle over the honey or maple syrup and stir to coat.
Add the crumble topping then bake in the oven for 25-30 minutes.
The top should be nice and golden and the fruit, hot and blipping away underneath.
Serve with the coconut yoghurt, or ice cream.

We enjoyed it but found the ‘crumble’ to be a bit too loose and dry for our liking - it didn’t hold together at all. Perhaps I blitzed it for too long? I like the idea of the nuts and oats in the crumble so I will try again but leaving the syrup/honey out of the fruit mix and instead adding a little sugar to the crumble mix to see if that helps to bind it.
Fantastic crumble. I used cooked rhubarb in one dish and frozen blueberries & strawberries in the other - a nice easy dessert 😊
A stunner. We used blueberries and apple … it was gorgeous. We’re having the rest for breakfast!! Light yet warming and satisfying.
Easy versatile recipe with protein and added protein with sweet topper
Light crumble mix. Going to try mixing with less blended crumbs to add more texture.
Best crumble mix, made mine with rhubarb
