Gather and prepare your ingredients.

Heat the olive oil in a frying pan over medium-high heat. Add the sweet potatoes with a sprinkle of salt and pepper. Cover, and cook for 6-8 minutes, uncovering several times during cooking to stir. Until tender but still with a little bite. Sprinkle over the spices and stir to incorporate.

Then add the spinach and cook for 2-3 minutes, until wilted.

Create 4 small trivets in the mixture and crack in the eggs. Sprinkle the top of each egg with salt and pepper. Cover the pan and cook for 3-4 minutes, until the whites have set but the yolks are still slightly runny.
