Courgette, Spinach, Tomato, and Feta Crustless Quiche

With sweet tomatoes, tender courgette, and creamy feta, this simple yet satisfying meal comes together in just 30 minutes. Make sure you pre-heat the ...oiled baking dish in the oven before adding the eggs to ensure a clean slice. Enjoy it on its own, serve some in a salad bowl to add protein, or use it as a sandwich filler. This tastes great hot from the oven, but is also nice served cold, making it a great lunchbox option. Tasty. I switched a few of the fresh tomatoes for sun-dried ones chopped into slivers which gave it a nice burst of flavour. I also increased the quantity of eggs to 2 per person.

Delicious and so easy

Delicious (though forgot to put spinach in, and used peas to eke out tomatoes). Definitely making again

Very delicious!!! Will be a regular one in our house.
The fan didn’t work at all, the eggs were still raw and runny after 30 mins. But I often feel that ovens work differently in different countries so no problem here. When using „Ober-/Unterhitze“ the dish was finished super quick.

Very yummy and an excellent way to use up veg - you can put all sorts of veg in it. Really nice cold for lunch the next day too!

Very tasty and simple. I cooked it on the bake setting, in the air fryer, at 160, for 20 minutes.
