You can use red wine vinegar as a swap for lemon juice but you won't need as much. Add a small amount to begin and stop adding when it tastes right to you.
We used a bag of pre-roasted almonds to make this sauce. If you can't find any, roast on a baking tray in an oven pre-heated to 160°C/140°C fan for about 15 minutes, until darkened and fragrant. Allow to cool before using.

Loved this. Super easy and delicious😋
Tried this for the first time but we had it as a main course rather than just a side, we added some edamame beans to it to bulk it out a bit and put some extra peppers in the romesco sauce. What a stunning flavour, it’s quite unlike anything we’ve tried so far and can’t describe it in words but it works beautifully.
I should imagine you’d be able to use almost any veg combinations with it, or even in a wrap it’d work brilliantly. Me and my wife do like trying new recipes and meals like this one just encourage us to try even more. You must be getting fed up of me commenting on your recipes all the time but each time I try something new you keep on astounding me with such lovely flavours. So once again thank you all so much 👍😊
Fabulous flavours! You do have to be a bit mindful when roasting broccoli and cauliflower together because broccoli florets char very easily. I served this with a little side of shrimp, pan fried with a touch of garlic and olive oil. Wonderful pairing for this recipe. Am loving your recipes! So far, they are simple to make, not overly time consuming, and are delicious and nutritious! With respect to your feedback section, it would be nice if there were a place where users could post their own photos of the recipes. The plating in your recipe photo implies more sauce than the recipe makes. That said, you definitely do not need more sauce. A little of this rich and delicious sauce goes a long way.
