Method

Gather and prepare your ingredients.

Top and tail the cucumbers, then lightly smash them using the side of a large knife or spatula until they crack and split.

Cut diagonally into 2 inch long pieces.

Place into a sieve placed over a bowl. Sprinkle with salt, toss to coat and set aside to drain for 10 minutes. Liquid should start to slowly drip down during this time.

Squeeze the cucumber, draining as much liquid as possible.

Pour over the gochujang, sesame oil, rice vinegar, maple syrup, and toss to coat. Sprinkle with sesame seeds and adjust seasoning.
