Method
Gather and prepare your ingredients. Line a 2lb loaf tin with parchment paper, or lightly grease with olive oil. Preheat your oven to 190°C/170°C fan.
Place the chia seeds, psyllium husk, oats, nuts, seeds, and salt into a large bowl. Stir to combine.
Pour in the water and olive oil and mix well.
Scrape the mixture into your prepared tin. If you like, you can leave it to soak for 30 minutes - 8 hours at this stage.
Bake for 60 minutes. Remove from the tin and bake for a further 15 minutes. Remove from the oven and allow to cool completely before slicing.

So tasty, love the crunchy nuttiness to it. Had it with peanut butter, so yum. Will be my daily bread also.
This is a great recipe and so easy to make. It's particularly yummy toasted. Please be aware the bread only keeps for a couple of days (especially in warm weather) so unless you intend to eat it straight away it needs to be either frozen or chilled -it will keep for about 5-7 days in the fridge.
Amazing for breakfast, top up with some poached eggs and it goes very well until breakfast. Half i have in the fridge, half i save in the freezer.
I'm planning on making this bread. Does anyone have any tips on what temperature to cook it at in the air fryer? I've got a ninja air fryer if that helps.
Forgot to add the salt and olive oil to the mix before I added the water and left to soak (and there was no easy it was going to mix in at that point when I realised I'd left them out 😂) but it still turned out great. Will definitely be making again.
I have made this 3 times now and love it
Great recipe, easy to make, tastes good and freezes well. It actually has become my daily bread
Great recipe. Have made multiple times. I make 2 loaves, let them cool, slice and freeze it. Quite energy intensive to cook, would be interested if anyone has cooked it in an Air Fryer and for how long.
Really easy to make, very tasty… stored well in the freezer
Delicious! Exactly as I expected it to be and I love it. I will definitely be making this often.
So tasty. Only tried toasted with butter so far. Looking forward to trying with smashed avocado for breakfast 👍
I have the privilege of a Thermomix they are amazing kitchen item
I did every step of the recipe but blitzed the nuts and seeds for a smoother bread, also i have a ninja airfryer oven . Job done absolutely 💯 smazeballs
Tasty, great texture, tummy filling and good for us. What more could we ask for? Listen to the Doctor and enjoy your own slice today and tomorrow…🤗
Very filling I,ve cut 12 slices & frozen. Bit expensive. Had for breakfast with a topping of peanut butter
I’ve made several seeded breads from Zoe etc and this is the only one I’ll make again as it has the best flavour and I actually enjoy eating it!
This isn't really like bread, but it is a delicious alternative, easy to make and really satisfying. I don't eat normal bread anymore since discovering this recipe 😋
Tastes amazing and it is healthy. I left mine overnight in fridge then baked. Turned out great.
Brilliant! We love it, will definitely be making this on repeat. Can’t fault it, except maybe it might become an obsession! Fantastic recipe, will help us to properly address some decent breakfast potential. Thank you!!
I let the bread rest for 30 mins before I placed it in the lined loaf tin. I made sure to push it down firmly and it came out perfect! Next time I may make this loaf, and then another loaf with some diced dried apricots or sultanas. What a great way to start the day.
Just had my first slice -delicious! Crunchy with nuts & seeds Left ingredients overnight to soak as advised by some reviews Cooked perfectly and slices as you would hope Will be freezing in slices for future eating Too moorish to leave out
Excellent 2nd time as I found syllium husk and let the “dough” sit for 30 mins prior to oven. Wonderful. My wife loves it ! Will def make again!
So easy and delicious! Will definitely make it again in a bigger batch.
I’d love some more suggestions of what to serve it with. Would feel wrong to add butter 🤣
Super healthy and tasty
Really enjoyed this and easy to make
Tasty
Loved the nutty taste of this bread and the crunch when eating it. Definately a good processed bread replacement when you want to top up with cooked breakfast items or salad etc for lunches.
Processed bread just badly bloats me to the point of painful pressure.
Love this and now have it everyday with some avocado and egg
Quite crumbly, what am I doing wrong? It falls apart in the toaster. Love it otherwise
I love this bread and I’ve now cooked it 3 times! The first time it came out perfect… but the next 2 attempts were different - it rose up into the tin but the minute I took it out for its final 15 minutes in the oven, it just collapsed. I must be missing / messing something up but o can’t quite trouble shoot the mistake. Any thoughts? Thank you!
Great fibre and protein addition to breakfast thank you
Maybe blitz nuts lightly si smaller pieces.. I'm off to try this now.. Great loaf Kitchen Doctor
Loved the bread….i though it would maybe a bit more crispy on the top though!
Really easy to make and delicious thank you
Need to soak overnite as in video. Please add this instruction. Very nice bread. Can we have a cheaper recipe ingredient wise. Easier on the pocket. Thankyou.
Loved this bread which will be a staple food in our home.
Fantastic bread very addictive, trying to resist second slice.
Question. The nutrition notes in book recipe is for one slice? ie: 1/12 loaf?
Tastes delicious, soaked it for about three hours, let it cool overnight then it fell apart when slicing it! Impossible to freeze in slices like that. Does it need soaking overnight- need to know.
My bread was soggy in the middle. Not at all spongy. Don't know where I went wrong
Very good and I will make again. Very filling too. However, I believe this will only last a few days? How should I store this bread? It is nothing like bread but very good.
Did not turn out like I thought it would
Very heavy. Expensive
Won’t make it again
Love this bread
SO easy and SO good!!
Thank you
keep recommending this bread to all my friends
Super easy to make.
Thanks
This is the best bread recipe ever, and believe me I'm a bread baker since a long time
Thank you Doc !
I’ve made this several times, the middle seems to a bit too moist, so I mainly toast it and then it’s good.
Not sure how big a slice should be, or weigh. To get those exact nutrients. Tasty though!
Great to have in the freezer to use a slice or two at a time. Great topped with homemade pesto and avocado.
I add a few berries in the mix which makes it nicer when eaten on its own. Will toast slices too to add a bit of crunch.
Loving this bread. I’d like to double the recipe so I get larger slices for sandwiches. Could you advise on cooking time please? It would be in the same size loaf tin. Many thanks, Nicky.
