Gather your ingredients. We used Serrano chillies here.

Place the peppercorns, coriander and cumin seeds in a pan over a medium heat and toast for 2 minutes until fragrant and golden brown. You can use the ground spices, but I recommend using the seeds for the more intense and rich flavour.
