An absolutely delicious meal. Added some home grown roasted beetroot. Will add some walnuts when I make this again. A definite favourite.
I added 200gms sliced mushrooms, 3tomatoes and half a capsicum. + 1tblsp chopped ginger. The mushrooms hid the Tempe flavour and I really loved the end product. Even my husband ate it and he hates tofu

I added cubed sweet potatoes to the bake and added twice the amount of tamari. First time trying tempeh and I loved it! I had cashew cream on hand that I made for another dish, so it was a fast meal prep. Delicious smoky flavor from the paprika. Will definitely make it again.
Smoked tofu works really well as sub for the tempeh. Really tasty, simple supper meal.

Really tasty. Love the cashew cream. Didnβt use all of the kale.
I actually used just plain firm tofu, but I gently mixed the spices, garlic tamari etc in a bowl before transferring to tray, to ensure the tofu was coated in flavour. Delicious! π
