Method

Preheat the oven to 220°C/ 200°C fan. Gather and prepare your ingredients .

Place the sweet potatoes onto a baking tray. Drizzle with half of the olive oil and sprinkle with salt and pepper. Place into the preheated oven and bake for 18-20 minutes until tender but not yet fully cooked.
