Method

Gather and prepare your ingredients. Preheat the oven to 220°C/200°C fan.

Place the aubergine rounds onto a baking tray. Drizzle with olive oil and use either a pastry brush or clean hands to ensure they are entirely coated. Sprinkle with salt and pepper. Place into the oven and bake for 25 minutes, or until tender.
