cut into 2cm rounds
red onion
cut into wedges
drained and rinsed
tahini
garlic cloves
grated
juiced
water
hot water
harissa paste
rocket leaves

Method

Gather your ingredients. Preheat the oven to 200°C (180°C fan).

Put the aubergine and red onion into a tray, drizzle with half the olive oil and a big pinch of salt and pepper. Roast for 35 minutes (turning halfway) until cooked through and nicely coloured.
