Method

Gather and prepare your ingredients.

Place the sun-dried tomatoes, nutritional yeast, water, and red wine vinegar into a blender and blend until combined. Add water if needed to help. Stir through the tahini and olive oil and adjust seasoning to taste. Add maple syrup to sweeten, if liked.

Place into a bowl with all other ingredients and toss to coat. Let it sit for about 10 minutes before serving, to allow the onions to absorb the dressing and mellow out.
