Very good. I didn’t have chickpeas so I added mixed beans instead. I only used one teaspoon of harissa paste but even so it was a bit too spicy, so I’ll use less next time. I added some frozen spinach as well. I served it with natural yogurt to tone the heat down.
First time with this recipe - used chopped tomatoes and added spinach - could become a regular lunch
Another flexible recipe! I used black beans instead of butter beans as that is what I had and added some jarred peppers. Made a great lunch with leftovers for breakfast tomorrow.
Such a delicious way to begin the day. So easy with few ingredients but a power house of taste. Loved it ❤️
Added spinach and served with flatbread
A spoon of Tahini goes well with this. For an extra protein hit, I added a tin of tuna on top of the eggs whilst they were cooking.
Really tasty but afterwards I felt it could with veg so I think next time I’ll add a side of Green veg to it. Not as filling as I’d hoped but maybe I had a particularly hungry day 😀
