Method

Gather and prepare your ingredients. Preheat the oven to 180°C/160°C fan. Lightly grease a 20 x 20cm oven-proof dish.

In a large bowl, mash the bananas and beat in the eggs. Add the oats, ground almonds, flaxseeds, cinnamon, and baking power. Mix to combine.

Add the milk and maple syrup; combine well. Fold in the grated carrot, pecans, and raisins.

Pour the mixture into the prepared dish and smooth over the surface. Place in the oven for 40 minutes until golden.

Serve with Greek yoghurt on the side.
