Aubergine & Walnut Ragu
Italian food is one of my go-to cuisines when I’m making a meal for more than four people.
The simplicity of ingredients and cooking method...s make it much less stressful in the kitchen, so you can focus on enjoying the company of your guests. Here, I’ve drastically reduced the amount of time it takes to make a traditional ragu and added nutrient-dense vegetables at every step. The nuts provide Omega-3 fats, plus lentils give the dish a good amount of fibre.

Probably my favourite meal ever.
Loving this thank you in spite of replacing carrot and celery with courgette and more onion, along with black beans to replace Puy lentils .
From my first cookbook and first recipe from Dr. Rupi I have ever made! I will never get bored of making it!
One of my favourites, love the sundried toms in it, full of flavour. I batch cook and use in lasagne etc.
Very tasty - we replaced the dried mushrooms with a packet of chestnut mushrooms, and doubled the amount of tomatoes to make it a more substantial main meal.
